Shrimp & Scallops Dinner

So I haven't been cooking that much recently... but tonight we did!

My mom and I made Shrimp and Scallops with mushroom quinoa, green beans, and a mango-strawberry-cilantro salsa.
Super healthy and super delicious :)



First, we made the mushroom quinoa. Quinoa is a super superfood, which is really redundant but it's so true. It's gluten free, wheat free (yay), and has all the vitamins and minerals we need to be happy. I cooked the quinoa in chicken broth, cause it's just more delicious that way. It's pretty simple, boil it in the broth until it absorbs it all, nothing too fancy. For the mushrooms, my mom and I sauteed them in balsamic vinegar and grape seed oil for about 15 minutes on medium heat. Then we mixed them in, and added spices.. so good.

Next, we made green beans.. nothing special, we just added shallots. This is mia. She ate a few.

I made a mango salsa for the scallops that was pretty good. I used this recipe and then added strawberries, peaches, and avacado.

And last, we seared the scallops, and cooked the shrimp in the big sauce pan in a butter sauce (like scampi). I just used salt, pepper, and a little bit of oil. No butter or grease. 

It ended up tasting amazing :) The scallops seared perfectly, and the quinoa soaked up the mushrooms and the balsamic vinegar really well. Make it, it's way delicious.

Overall, this meal was gluten free, sugar free (if you exclude the fruit), and wheat free!

Here's the finished product. I know it's a lot, but if I'm doing the whole healthy thing I have to eat more.

Introduction




Hello!
I'm Ryan
So this is me. I go to school at the University of Missouri, I'm an Alpha Chi Omega, and I'm from Dallas, Texas. Let's get one thing straight. Texas is the most amazing place that God has graced us with in the history of the world. That's all I'm going to say because any more and people just get annoyed. I have this pretty awesome boyfran. He's a 2nd lietennant in the Marine Corps and I'm way proud of him. 

This blog is an experiment. Partly because I've never made a blog before, and partly because I've never tried eating this healthy before. I've gone on mini diets just like everyone has, but it's time that I step it up. Around Christmas, I found out I have a gluten and wheat intolerance (which I'm pretty sure is the same thing), and I needed to almost cut it out completely. Also, anything dairy makes my stomach feel all funny, so I'm going to try to avoid that as well. Like the blog description says, I'm a total fatty.... so I didn't even try to follow the diet. But the truth is, eating the way I'm "supposed to" actually makes me feel better. An added plus is that is doesn't kill my workouts as much as my normal diet does. Woohoo! 

So this is it, my blog. About me working my ass off to eat like I should, and hopefully eating something besides salad in the process.
Oh yeah, I HATE salad.

That's it about me! Hopefully I'll start posting real stuff when I go back to Dallas on Saturday. Currently, I'm broke and all I have is turkey, cereal, and hummus... so clearly nothing interesting to blog about. Butttttttt I will soon!
